This weekend I made myself some indulgent strawberry blondies and thought I would share my recipe so you can all enjoy some sweet treats.
This blog is about body confidence and self love, and Toni and I can’t stress enough that life is too short to worry about if you’ll get wobbly hips or similar; everything in moderation, right? The ying with the yang. So enjoy, and if you decide to make these, please share your thoughts and photos ^-^
You will need:
150g of unsalted butter
250g of good white chocolate (I used green & blacks)
175g of caster sugar
3 large eggs
75g plain white flour
200g white chocolate chips
100g freeze dried strawberry flakes
The fun part:
Preheat your oven to 170c (150 if you have a fan oven) and then grease and line your favourite cake tin, preferably 20cm.
Break up the chocolate pieces and cut the butter into small blocks, place in a clear bowl and put it on a pan of simmering water. You’ll only need a small amount of water in the pan; it shouldn’t touch the clear bowl. Let the steam do its thang.
Once the chocolate and butter have melted, give it five or so minutes to cool down and then add your sugar. Now you need to go all Michael Jackson on the mixture and beat it (just beat it! Beat it!) I would recommend using an electric whisk or hand held blender to really infuse the ingredients.
Add the eggs one at a time (using the blender to whisk) until combined. Sift in the flour and beat until the mixture is smooth.
Add your chocolate chips and strawberry flakes and gently stir the mixture.
Put the fantabulous ingredients into your cake tin and place in the oven. After 20 minutes, take it out and gently poke some holes into the blondies and then put back into the oven for another 10 minutes.
Take out and feast! Feast merrily.
